THE JOY OF COOKING [ IDLI]

RAWA IDLI

Ingredient

1 cup semolina [rawa, suji]

I cup yogurt [dahi]

1/2 cup water

1/2 spoon soda

1/2 tbsp oil

Chopped curry leaves

4 tbsp salt [ according to taste]

 method

First take a pan / kadai heat 1/2 tbsp oil

Add rawa suji and roast well. until rawa turn aromatic. Transfer rawa into another bowl and Allow to cool the rawa completely

 Add salt, curry leaves, yogurt and water mix it well forming a batter.

Keep aside for 15-20 minutes

Mix well and  If water is required add more. Just before steaming add soda or 1/3 tbs eno [fruit salt] and mix it well till it turn frothy

Grease the idli plate with oil and pour the batter

Steam for 7-8 minutes on medium flame

Finally sever idli with sambar and coconut chutney or either fry the idily.
